Loaded Cauliflower




Serves approx 6

Gluten Free, Low Carb


1   cauliflower head, chopped into florets

2   eggs

4 pieces   of bacon, chopped into approx 2cm cubes

Approx 1 cup   cheese, grated (stronger cheese is better for taste - ie. tasty or colby, but any cheese is fine)

1 tbsp   cajun seasoning

Salt & Pepper   to taste

1.5 cups   LSA (ground linseed, sunflower, almonds)



Pre-heat oven to 220 deg bake, and line an oven tray with baking paper.

Pat dry cauliflower florets if wet.

Add LSA, cajun & salt & pepper into a bowl and mix.

Whisk eggs in a separate bowl. Dip cauliflower florets into the egg, then cover/roll in the LSA mix.

Spread florets onto the oven tray.

Sprinkle grated cheese over the cauli, along with chopped bacon pieces. Drizzle with olive oil.

Place tray in pre-heated oven and leave for approx 30mins. Turn over around the half way mark.

Serve with a dollop of greek yogurt. Yum!
